BRUSCHETTA

1 quart plum tomatoes, diced

8 cloves garlic, minced

1 large red onion, minced

1/2 cup fresh basil, chopped fine

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

Shredded parmesan cheese

 

Combine all the ingredients and marinate un-refrigerated over night.

This must be marinated at least 12 hours for the best flavor.

 

The next day:

 

Cut a loaf of ciabatta, baguette, or other harder-type bread on the bias, and rub with garlic-infused olive oil. Toast bread on a sheet trayuntil golden brown and crispy.

Spoon bruschetta on to toasted bread with a slotted spoon and finish with shredded parmesan
